Employee Spotlight: Leticia Mexquitic!

AT TINY PIES, OUR BAKERS WORK VERY HARD CREATING WONDERFUL PIES FOR OUR CUSTOMERS. BAKING IS NO EASY TASK AND REQUIRES EARLY MORNINGS & HOT KITCHENS. SO WE WANTED TO SHINE A SPOTLIGHT ON OUR FABULOUS STAFF AND INTRODUCE YOU TO THE LOVELY LADIES WHO MAKE OUR PIES FROM SCRATCH EVERY DAY! 

To kick off the first in the series, we wanted to focus on Leticia Mexquitic in honor of her home country of Mexico as we celebrate Cinco de Mayo this Friday, marking the Battle of Puebla - when greatly outnumbered Mexican soldiers beat French forces and helped pave the way to Mexican independence. 

Originally from San Luis Potosi, Mexico, Leticia started with us in the Spring of 2016.

Her baking career began as a dishwasher at the legendary Green Pastures restaurant where she worked her way up to pastries and fell in love with them! So much so that she was a pastry chef there for 18 years! 

Leticia loves decorating and cooking and took only TWO (!) decorating classes, the rest she taught herself, including the painstaking task of decorating wedding cakes.  To say she is talented is truly an understatement.  

To commemorate her Mexican heritage, Leticia has created Margarita pie bars for this Friday May 5th only!  

Similar to a lemon bar, this amazing treat combines a lime margarita custard with a touch of tequila on a graham crust and topped with whipped cream, kosher salt, and a candied lime! It is divine!!
